

| We are so excited to finally offer this page to our web site. After several months of research we finally found a laboratory who would test our bread as soon as they received it instead of waiting for several weeks like most labs. We were also pleased that they would test for specific nutrients that we knew that our customers would be interested in. We know through our research of the history of white flour, by stripping away the bran and germ and leaving the white flour you have lost just about all of your vitamins and nutrients. Because of the health problems that occurred in the early 1900's the grain millers added a few (and I repeat A FEW) of these nutrients back. These nutrients being, Thiamin (B1), Riboflavin (B2), Iron, and most recently, Folic Acid. We had the lab test for these nutrients so that we would be able to prove that they are in the flour to begin with and if the food industry would just leave it alone, there would be no reason to have to add these nutrients back to flour calling it "ENRICHED". It has also been interesting the see the movement in the food industry towards "Whole Grains". We have noticed that although the first ingredient may be "Whole Wheat Flour", a few ingredients down will be "Enriched Flour", or "Wheat Gluten" which is basically white flour. It makes us question what the quality of the "Whole Wheat Flour" is that they are using. If it isn't freshly milled flour, then the nutrients are lost long before the product is ever baked. We also had them test for one other vitamin and that is Vitamin E. We know from our research that freshly ground whole wheat flour is the richest source of vitamin E but this is one of the first vitamins to oxidize so the flour must be used as soon as possible to retain this vital nutrient.
